I havent heard of a game that called for SLI yet. I have 1 BFG 7950 GTX OC 512 Meg PCI express 16 for my new computer. I feel this will be good enough for all my gamming needs. plus get the one great card thats SLI compatible and then down the road you buy another one when you want to go SLI. dont have to so SLI unless you want too. A single graphics card also requires less power and less configuration than SLI, so that is what you should go with.
